Fish Dipping Sauce - {Nuoc Cham}

5 tablespoons 75mlSugar
3 tablespoons 45mlWater
1/3 cup 78mlFish sauce
1/2 cup 118mlLime or lemon juice
  = (abt 3 limes or 2 lemons)
1   Garlic clove - crushed, peeled, (large)
  And sliced or minced
1   Bird's eye or Thai chile - (or more) - seeded, and
  Sliced or minced
1   Shallot - peeled, sliced thin,
  Rinsed and drained (optional)

Recipe Instructions

Whisk together the sugar, water, fish sauce and lime or lemon juice in a bowl until the sugar is completely dissolved. Add the garlic, chile and shallot (if using), and let stand for 30 minutes before serving.
